Apple crumble

This easy apple crumble can be served as the perfect winter breakfast or dessert topped with greek yoghurt and honey for the perfect protein hit! This recipe is super easy, requires minimal effort and clean up. The crumble topping makes more than enough for 6 serves, and i use the left overs as the perfect crunchy granola. If you are looking for a lower fat option, sub out the butter for something like Nuttelex or ProActiV

This easy apple crumble can be served as the perfect winter breakfast or dessert topped with greek yoghurt and honey for the perfect protein hit! This recipe is super easy, requires minimal effort and clean up. The crumble topping makes more than enough for 6 serves, and i use the left overs as the perfect crunchy granola. Ingredients

Apples
1kg granny smith apples
1 tbs salted butter
2 tsp cinnamon
2 tbs water

Crumble:
1 cup of oats
2 tbs brown sugar
175g salted butter
1 cup plain / GF flour

Serves 6

Method

1. Pre-heat your oven to 200 degrees celsius. 

2. To make the apples, slice your apples into 2cm cubes - I don’t peel my apples as I can’t be bothered but feel free to peel them if you like, it makes no difference to the flavour.

3. Once cubed, place the apples, butter, cinnamon and water into a medium sized saucepan. Cook over a high heat for 10-15 minutes, or, until the apples have softened. Once cooked, strain the apples and keep the juice! 

4. To make the crumble, melt your butter, then combine all ingredients and mix well. You may choose to add nuts and seeds into the crumble along with additional spices to add an additional level of texture to the dish. If the mixture is too wet, add additional flour as needed. If it’s too dry, add some of the strained apple juice mixture. 

5. Place your apple mixture into small ramekins, or a large baking dish. Top with a generous layer of crumble mixture (to a thickness of your liking). 

6. Bake until the crumble topping turns golden brown.

7. Serve with some honey greek yoghurt and the stewed apple juices, or a scoop of ice-cream if you are feeling naughty!
